We really enjoy this recipe. I like mine served with a dollop of sour cream.
Preheat oven to 350 F.
1 pound of ground beef
1 small chopped onion ( I don't use a whole onion, use the amount you think your family will like)
2 small jalapeno peppers chopped ( I did not use this many, I used maybe 2 tablespoons of canned peppers)
1 package of corn bread mix ( used Jiffy mix)
1/4 teaspoon salt
1/2 teaspoon baking soda
1 can cream style corn
1 cup milk
1/2 cup cooking oil ( used canola)
1 egg
2 cups cheddar cheese shredded
Brown the beef, onions and peppers. Drain and then set aside.
In a large bowl mix the corn bread mix, salt, baking soda, corn, milk, oil and egg.
Pour half the bread mix in a 9 x 13 pan. Put half the cheese on and then put the beef mixture on top of the cheese and sprinkle more cheese on top of beef and then pour remaining bread mixture on top and sprinkle with cheese.
Bake at 350 degree F. for about 45 minutes.
